Another Friday, another go at the whole cooking thing. I have a freezer of chicken, I love chicken, chicken has the protein I need, chicken doesn’t cost me my paycheck, & chicken can be cooked in many ways. Chicken. Chicken. Chicken.
This week’s chicken meal is:
Sweet and Sour Chicken served over white rice with a side of steamed broccoli (and extra sauce)!
-Boneless, Skinless Chicken Breasts (I used organic/99% fat-free)
-Cornstarch (I used Bisquick)
-Apple Cider Vinegar
Okay, so, lets start with the chicken!
I first preheated the oven at 325F and took out a casserole dish to cook in, and had my skillet ready on the stove top. I’m slow at cooking so I waited to heat the oil in the skillet, but if you’ve got the speed and experience, get it heated while you prepare the chicken by all means!
I cut two chicken breasts in nice, bite-sized pieces.
(I now heated up the skillet) I first sprinkled salt/pepper over the chicken, then put some Bisquick in a bag, and shook up the pieces of chicken, coating them evenly.
Next, I beat an egg in a small dish, dipped the pieces in the egg, and put them on the skillet to cook on each side for a couple/few minutes. (This step allows the chicken to be crispier on the outside)
When the chicken finished (not cooked all the way), I spread them out in the cooking dish and started to prepare the sauce.
3/4 cup sugar
1/2 cup apple cider vinegar (I learned to use less due to its potency)
1 tblsp Soy sauce
3 tblsp catsup
1 tsp garlic salt
Mix all ingredients together thoroughly, then pour overtop the chicken. Put it in the oven (325) for about an hour (I did much longer because I love a nice, charred taste to my chicken), and be sure to flip the chicken pieces once or twice within the hour.
I then made a second batch of sauce and put it on the stove top on med/low for 10+ min until it thickened a bit. I added extra sugar and less vinegar to help it become thickened.
Finally, the easiest part!
20-30min before chicken finishes, make the rice and broccoli. Make rice according to the box. Rinse the broccoli, cut it, and do as you please with it. I prefer mine made in a steamer for 15-20min then adding butter when it’s finished.
There you have it! Yummy chicken to put over rice with sauce to pour overtop and broccoli on the side! Have fun with the clean up! It’s a blast!
